Once the fennel has been prepared, it is time to turn to the oranges. Peel them raw, removing the peel and the white part attached to it. Next, make wedges from the citrus by cutting it at the sections visible when looking at the fruit from above, where the stalk was, and set them aside.

The orangette is just the next step in the recipe. Transfer the orange juice from the citrus fruits used into a container.
