More than a tradition, the lemon is a typical ritual of Sicilian culture. It is no coincidence that waking up in Sicily is synonymous with granita for tourists and Sicilians alike: this is because it is not so much a simple dessert as it is the island’s typical breakfast, and not exclusively during the warm season.

A recipe as tasty as it is simple, the real challenge in replicating it at home is getting the texture right: neither ice cream, nor popsicle, nor even lemon sorbet, granita has a nature all its own. Here’s how to make it at home following the original recipe and some suggestions on variations to make.

Sicilian lemon granita: a ritual of ancient freshness

The ritual of Sicilian lemon granita has ancient origins related to the figure of the “nivaroli .” This was a trade that predated the advent of refrigerators, involving the collection of snow from Mount Etna to be transported either to the neviere, natural caves or stone structures where the snow was compacted and stored in blocks of ice, or downstream to the city during the summer to cool food and drink of the nobles.

It was thanks to the work of the nivaroli that granita was born, originally created by combining snow with fruit juices or syrups, on the practice dating back to the Arab domination of sherbet.” Later, the recipe was perfected through the use of new tools, which made the consistency of Sicilian granita as velvety as it is today.

How to make lemon granita: the step-by-step process

How to make lemon granita? This is a simple recipe that involves only a few steps and ingredients. For this reason, it is important to choose first-rate products and perform the steps as described to achieve an optimal result.

  1. The first step in making lemon granita at home without an ice cream maker is preparing the syrup. Pour cold water into a saucepan along with the washed lemon peels , bring to a boil and then add the sugar. Stir continuously to melt it, then turn off the heat, remove the peels and let the syrup cool.
  2. While the syrup is cooling, cut the peeled lemons in half and squeeze them to obtain the juice. Strain the resulting juice well through a strainer and incorporate the liquid into the syrup, mixing well with a whisk. If you prefer a more flavored granita, finely chop the peels in syrup and add them to the syrup.
  3. Pour everything into a covered plastic or metal container and place it back in the freezer. From now on, every half an hour, take the container out of the freezer to vigorously stir the mixture with the help of a fork. Repeat about 4 times or until you get the desired consistency.

If, on the other hand, you have an ice cream maker, after creating the mixture of water, sugar and lemon juice and letting it cool at least 3 hours in the refrigerator, start the machine and pour the mixture inside. The whisking will allow you to obtain the silky texture typical of Sicilian granita.

Secrets to a flawless lemon granita

But what are the tricks to get a flawless lemon granita that looks like the original? Here are some tips and tricks to get a professional result!

The balance of sugar

A first element that should not be underestimated concerns the balance of sugar. This is because, in the recipe sugar has not only the sweetening function but also acts as an anti-freezing agent.

This means that adding too little sugar is equivalent to getting a block of ice, while putting too much sugar prevents freezing and thus achieving the ideal consistency.

The importance of constant cold and ingredients

One issue to keep in mind regarding preparation with the ice cream maker is that of water temperature: in fact, if the mixture of water, sugar and lemon juice is placed in the ice cream maker at room temperature, the time will be considerably longer than if starting from a cold base. For this reason, it is recommended to keep the mixture in the refrigerator about 3 hours before starting the ice cream maker.

Also remember to avoid adding lemon juice at the stage of boiling water and sugar, and to add it only after the syrup has cooled. This preserves the vitamin C contained in the lemon, which would otherwise be destroyed by heat.

Finally, since this is a recipe with very few ingredients, it is essential that these are of the highest quality, starting with thewater. The advice is to use a light, natural mineral water that enhances the aroma of the lemon instead of covering it up as would happen with lime water. As for lemons, it is recommended to use fresh citrus and especially with edible peel, so that you can be sure that you are not taking in chemicals or waxes when you add the lemon zest to infuse.

How to serve Sicilian granita: between tradition and variations

Sicilian breakfast with granita and “brioche col tuppo”

As anticipated, Sicilian lemon granita is synonymous with breakfast on the island, for locals and tourists alike. In this regard, the pairing is as immediate as it is sacred: the “brioche col tuppo” can only be the perfect accompaniment for a traditional Sicilian breakfast. The temperature of the brioche is crucial: it must be warm and freshly baked, in total contrast to the cold granita.

Lemon granita variants: between “scursunera,” mint and ginger

Besides the classic version of homemade lemon granita, it is possible to prepare some variations of the recipe. For example, the nobles of Palermo used to make a lemon and jasmine granita called “Scursunera.” To make it, all you need to do is to steep jasmine flowers in water the night before you use it for the granita, so that it is flavored, and then also add a touch of cinnamon.

Alternatively, another great classic is lemon and mint granita. To make it, simply blend a few fresh mint leaves with cold syrup. The color will be greener than the classic slush and the flavor will be even fresher and more aromatic.

Finally, for a modern and spicy twist, you can think about a variation of lemon granita with ginger. Just add a little fresh ginger to the syrup for a spicy and equally fresh taste.

How and how long to store lemon granita

Once we have clarified how to prepare lemon granita, how and for how long can it be stored in optimal conditions? On timing, granita can be stored in the freezer for about 2-3 weeks , but it is essential to follow a few steps:

  • Use an airtight plastic or metal container to prevent it from absorbing freezer odors;
  • After a few days, the slush will tend to harden: before serving, let it stand at room temperature for about 10 to 15 minutes;
  • Should it be too firm, quickly run it through a blender or work it with a fork to achieve the desired consistency.

Nutritional values and benefits of lemon granita

In addition to being a treat for the palate, homemade lemon granita also has several plus points for our well-being, especially when prepared with fresh and unprocessed citrus fruits. In particular, the benefits of lemon are diverse, as are the properties of lemon peel. To give one example, lemon is a mine of vitamin C and antioxidants, which are useful for boosting the immune system and fighting free radicals.

In addition, since the main ingredients of lemon granita are water and lemon juice, this preparation is an excellent natural remedy for hydration. Added to this are the digestive properties of the limonene contained in lemon peel, making the slush a perfect light end to a meal. Finally, since it is fat- and lactose-free, it is a dessert suitable for everyone, from those with celiac disease to those who are lactose intolerant.

Finally, if you want to opt for a made-in-Sicily variant, from October to December you can choose to use our limes, for a more acidic and aromatic-tasting granita.

But what is the strong point of our lemons? Undoubtedly, it is essential to mention that they are quality products, grown under the Sicilian sun respecting nature’s time, without human forcing. This is also the reason why our lemons have a more intense flavor and aroma than other products.

But a special feature of our lemons is also the growing context: in fact, thanks to Sicily’s volcanic microclimate and fertile soils, our products acquire an original characteristic taste that is impossible to replicate elsewhere.

FAQs – Frequently asked questions about lemon granita

How can you stop granita from turning into a block of ice?

The secret lies in sugar and movement. Sugar acts as a natural antifreeze : if the slush is too hard, there is probably too little sugar. Also, if you are not using an ice cream maker, it is essential to break up the ice crystals every 30 minutes with a fork during the freezing phase.

What is the difference between granita and sorbet?

The main difference is the texture. Granita has a crystal-like texture even when set, while sorbet is finer, almost creamy, and often contains a meringue base or thickeners that are not present in the original Sicilian granita.

Can you make lemon granita in a blender?

It can be made, blending ice cubes with lemon juice and sugar. However, the consistency will be very different from the Sicilian original, which comes from slow and controlled freezing of the liquid.

How long does lemon granita keep in the freezer?

It keeps well for about 15-20 days. If it gets too hard, leave it out of the freezer for 10 to 15 minutes and process it quickly before serving to restore the right graininess.
