Step-by-step preparation

The Procedure

The preparation follows the essential gestures of custard: the milk is heated slowly, the yolks processed with sugar, vanilla and starch, until the mixture is smooth.

The Tarocco Ippolito

The Tarocco Ippolito orange enters two key moments: the zest, finely grated, to perfume; the juice, to give freshness and depth.

The mixture returns to the heat and is cooked carefully, without ever exceeding the critical temperature: the cream must thicken while remaining silky.

Rest

Once ready, it is left to rest in the refrigerator for at least four hours.
It takes time for the cream to settle and the citrus aromas to blend.

The burn

It’s the defining moment of dessert.
A thin layer of sugar is sprinkled on the surface and caramelized with a blowtorch until a crispy, amber crust is created.

The result is a balanced, elegant cream, with a depth that remains even after the last spoonful.
