But how do you make lemon sorbet? Here is the step-by-step recipe to get a homemade lemon sorbet to serve to your guests.

Preparation of the sugar syrup

Once you have collected all the ingredients of the Sicilian lemon sorbet, the first step in the preparation of this fresh dessert involves dedicating yourself to the syrup.

Pour the water into a saucepan and add the sugar. In the meantime, wash the lemons and cut the rind, avoiding the albedo, i.e. the white and bitter part. At this point, add the lemon zest to the sugar and water mixture in the saucepan and simmer for a few minutes, stirring constantly.

When the mixture is smooth and the sugar is completely dissolved, turn off the heat and remove from heat to cool.

Once cold, filter the syrup with a sieve, in order to remove the lemon zest.

Remember: if you have to use the peel, it is essential to use untreated lemons, so as to be sure not to run health risks.

Lemon juice extraction and filtering

Cut the lemons in half from which you have taken the zest and extract their juice with the help of a juicer. Next, strain the lemon juice obtained to remove any seeds. Once filtered, add the juice obtained to the syrup and stir to mix the lemon juice into the mixture.

Preparation and pasteurization of egg whites

An important step in the recipe involves pasteurizing the egg white. To do this, it will be necessary to use the method known as “bain-marie“, which involves using a pot with little water to heat and a smaller container inside.

  • Put a pan with a few centimeters of water to heat over low heat.
  • Place another pan or a smaller bowl inside the saucepan, so that it does not touch the water.
  • Pour the egg white into the upper pan and start whipping until stiff while the water heats up.
  • When the temperature of the egg white has reached 60 °C – 65 °C, the egg white will be pasteurized.

Assembling the ingredients

Once you’ve finished preparing both the syrup and the egg white, it’s time to combine the ingredients.

Then pour the whipped egg white into the liquids and add it with movements from the bottom to the top until you get a homogeneous mixture. When you are finished, transfer everything to a container or tray that you will keep in the freezer for at least 4 hours in order to thicken it, stirring occasionally.

Method without ice cream maker (manual creaming)

In addition to resting in the freezer for about 4 hours, it is essential to stir the sorbet every half hour or so. If you do not have an ice cream maker, this step will have to be carried out manually, removing the sorbet from the freezer every half hour to stir it and storing it until the next half hour. In this way, it will be possible to obtain a creamy lemon sorbet, avoiding ice crystals.

After 4 hours, and before serving, remove the container from the freezer for a last quick creaming. Serve the sorbet in cups or flutes and decorate with lemon zest and fresh mint on top.

Method with ice cream maker (quick variant)

A faster method for preparing lemon sorbet involves the use of the ice cream maker. Once the syrup is prepared with water, sugar and lemon juice, put it in the refrigerator for about an hour.

After the time has elapsed, pour it into the ice cream maker and stir for just over half an hour or until it has reached the right consistency.

Once ready, remove the sorbet from the ice cream maker and put it in the freezer for at least 4 hours, after which you can serve it after letting it rest a little at room temperature.

To prepare lemon sorbet it takes about 40-60 minutes between making the syrup, pasteurizing the ingredients and cooling phases. However, it must also be considered that to be ready you need to let the sorbet rest in the freezer for at least 4 hours.

Techniques to speed up the process

To make a quick lemon sorbet and speed up the preparation process, you can use the ice cream maker, so as to also avoid creaming during the freezing phase.

Alternatively, you can prepare the lemon syrup a day in advance, so you simply have to assemble it with the egg whites and let it rest in the freezer. Unfortunately, it is not possible to decrease the freezing time much to get the correct consistency of the sorbet.

To store Sicilian lemon sorbet, it is advisable to use a container with a lid suitable for use in the freezer. In this way, it will be possible to avoid crystallization of the sorbet during freezing.

How much to leave the sorbet in the freezer

To get the right consistency, the lemon sorbet recipe calls for it to stay in the freezer for at least 4 hours. As for storage, in case the Sicilian lemon sorbet is not consumed all at once, it is possible to keep it in the freezer for about a month. For prolonged storage, it is advisable to avoid skipping the pasteurization of the egg white.
